This is a delicious pear and honey cake that I'm sure everyone will enjoy. Designed by a local chef using local honey!
- 80g soft butter
- 60g brown sugar
- 150g wholemeal flour
- 150g Sweetree Honey
- Pinch salt
- 3 eggs
- 1 tsp nutmeg and cinnamon
- Finely grated peel of 1 lemon
- 6 peaches
Beat butter & sugar until fluffy. Add honey and mix well.
Add flour, eggs, salt, spice and lemon peel plus 1⁄2 the peaches (chopped) and mix.
Pour into greased cake tin and arrange remaining peaches on top.
Bake in pre heated (180 degree C) oven for 30 minutes.
